Wellness with Natalie: Delicious snapper & mango salsa recipe

Hi there loyal Loop readers! You may have wondered where I have been for the past two weeks. (Or not even missed me at all 🤔). Well, my partner and I were busy launching one of the elements of our new brand.

Snapper Fillet With Mango Salsa

Ingredients:

4 snapper fillets

2 tablespoons jerk seasoning

1 almost ripe mango, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 small cucumber, diced

½ cup parsley, finely chopped

½ cup red onion, diced

Large head of romaine lettuce or other salad greens

1 tablespoon lime juice

1 tablespoon extra virgin olive oil

Sea salt

Black pepper

For the Jerk Seasoning:

Process the following in food processor, adding water if needed to loosen mixture:

1 tablespoon ground pimento

2 teaspoons ground thyme

1/4 teaspoon ground cinnamon

1 teaspoon red pepper flakes

1/4 teaspoon ground cumin

1⁄4 teaspoon ground nutmeg

2 teaspoons sea salt

1 teaspoon freshly ground black pepper

2 stalks scallion

2 cloves garlic

Directions:

1. Season snapper with jerk seasoning and set aside in the refrigerator to marinate for an hour

2. In a medium bowl, toss mango, peppers, cucumber, onion, parsley and lime juice. Add salt and pepper to taste

3. Add olive oil to a medium skillet and heat. Sear fillets for 3 minutes on each side, check to ensure fish is cooked through but not overcooked

4. Remove cooked fish from the pan and serve over a bed of greens with salsa on top.
